Ingredients
- Firm red capsicum
- Eggs
- Oil for frying
Instructions
- Slice the capsicum into circles approx 50mm deep. Carefully remove any seeds.
- Gently heat the oil in a frying pan.
- Add a slice of the capsicum to the pan.
- Crack an egg into the capsicum circle.
- Fry gently until the capsicum has softened and the egg is cooked the way you like it.
- Repeat as necessary.
