Breakfast recipe - fried eggs and capsicums!

Loving this recipe idea for breakfast sent through from a friend recently. So simple to make, but looks like you've spent hours in the kitchen!



Ingredients 
  • Firm red capsicum
  • Eggs
  • Oil for frying

Instructions 
  • Slice the capsicum into circles approx 50mm deep. Carefully remove any seeds.
  • Gently heat the oil in a frying pan.
  • Add a slice of the capsicum to the pan.
  • Crack an egg into the capsicum circle.
  • Fry gently until the capsicum has softened and the egg is cooked the way you like it.
  • Repeat as necessary.
